It's Pankeggs! <span style="font-family: Arial, Helvetica, sans-serif;">In my quest to perfect the flourless cauliflower breakfast pancake, I came across something else, something almost as equally delicious... Cauliflower scrambled pancakes! They're delicious! They taste just like pancakes, but with all the nutrition and looks of scrambled eggs, plus hidden veggies! I drizzled mine with some SF pancake syrup to complete the experience :)</span><br>

<span style="font-family: Arial, Helvetica, sans-serif;"><br></span>
<span style="font-family: Arial, Helvetica, sans-serif;"><b>Recipe:</b></span><br>
<br>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">12 oz steamed cauliflower</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">3 eggs</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/8 tsp pure stevia extract</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/16 tsp salt</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/4 tsp baking soda</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1 tbsp apple cider vinegar</span></li>
</ul>
<br>
<span style="font-family: Arial, Helvetica, sans-serif;"><br></span>
<span style="font-family: Arial, Helvetica, sans-serif;"><b>Directions:</b></span><br>
<br>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Blend all ingredients EXCEPT apple cider vinegar until smooth. Do not add vinegar until you are ready to cook the pankeggs. Heat your stove to med/high and fry them up just like you would scrambled eggs.</span></li>
</ul>
<br>
<span style="font-family: Arial, Helvetica, sans-serif;"><br></span>
<span style="font-family: Arial, Helvetica, sans-serif;"><b>Notes:</b></span><br>
<br>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">These give off a lot of water while they cook due to the cauliflower. You can either eat them a bit moister than normal eggs, or cook the heck out of them!</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Do not be alarmed that they are turning brown. They are not burnt.</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">I don't know why I put ACV in them. I don't know what will happen if you leave it out. I just like ACV. If you/I try it without, please report back :)</span></li>
</ul>
<div>
<span style="font-family: Arial, Helvetica, sans-serif;"><b>Question of the Day:</b></span></div>
<div>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">What cauliflower creation would you like to see next? Any suggestions would be great; I'll do as many as I can!</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Also: any suggestions on how to make a flourless cauliflower pancake stick together and be flipped?</span></li>

The antithesis of healthy treats. Or are they? Last night, I made a version of this creamy devil with cauliflower, and it turned out great! The cauliflower gives it a rich creaminess without the fat of heavy cream, and the addition of real cake mix gives it an authentic flavor. It's vegan and sugar-free, too, if you use sugar free cake mix.</span><br>

<span style="font-family: Arial, Helvetica, sans-serif;"><br></span>
<b><span style="font-family: Arial, Helvetica, sans-serif;">Ingredients:</span></b><br>
<br>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">12 oz steamed and chilled cauliflower</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">2 c almond milk</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/3 c cake mix</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1 tsp butter extract (This is a thing. It is vegan)</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/4 tsp pure stevia extract</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/8 tsp salt</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/8 tsp baking soda</span></li>
</ul>
<div>
<b><span style="font-family: Arial, Helvetica, sans-serif;">Directions:</span></b></div>
<div>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Combine all ingredients in a Vitamix (other blenders should work as well)</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">blend until smooth</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Follow your ice cream maker's instructions to turn it into ice cream</span></li>
</ul>
<div>
<b><span style="font-family: Arial, Helvetica, sans-serif;">Notes:</span></b></div>
</div>
<div>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">If you do not have an ice cream maker you can freeze your blended mixture in an ice cube tray and then blend it in the Vitamix. I do not know if another blender will do this for you, I have not tried it. It won't be as rich and creamy this way, but it will still be delicious! </span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Perhaps you could freeze half of this mixture and make a milkshake?</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">The baking soda brings out the flavors. It doesn't make it taste weird.</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Recipe yields about 3.5 cups</span></li>
</ul>
<div>
<b><span style="font-family: Arial, Helvetica, sans-serif;">Question of the Day:</span></b></div>
</div>
<div>
<b><span style="font-family: Arial, Helvetica, sans-serif;"><br></span></b></div>
<div>
<span style="font-family: Arial, Helvetica, sans-serif;"> What's your favorite type of ice cream? And do you think anybody really eats only 1/2 a cup? I want at least 8 oz of ice cream, especially cookies n' cream. I'm pretty sure that's my favorite. Oh, and Moose Tracks. Mmmmmm.... Moose Tracks.....</span></div>

I always keep one those 6-pound Costco bags of 'em in the freezer. This morning I decided to throw some into my PB frosting. It was uber-yum! I also turned this frosting into more of a mousse with the addition of extra liquid. This would be a great breakfast, dessert, or snack!</span><br>

<b><span style="font-family: Arial, Helvetica, sans-serif;">Question of the Day:</span></b></div>

<b><span style="font-family: Arial, Helvetica, sans-serif;"><br></span></b></div>
<div>
<span style="font-family: Arial, Helvetica, sans-serif;"> Do you like PB&J? I love this combination. When I was younger, I was addicted to Smucker's Uncrustables. Knowing they are so bad for you, though, I like to make healthy alternatives. I often will put PB2 and strawberries in my smoothies, along with some cereal, and it feels like I'm drinking a sandwich! I'll have to try this in a pita. I need one those sandwich press things that makes Uncrustables :)</span></div>

I prepared to put butter and parmesan on it, like usual, but I really wanted something sweet. Then inspiration struck! Peanut Butter Frosting! I took out the Vitamix, dumped in a few ingredients, and, voila, healthy, tasty PB Frosting!</span><br>

<span style="font-family: Arial, Helvetica, sans-serif;"><b>Ingredients:</b></span><br>
<br>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">12 oz steamed cauliflower, warm or chilled (not super hot)</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/4 c powdered PB, such as PB2</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1/3 c pumpkin puree</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">1-2 tbsp granulated stevia</span></li>
</ul>
<div>
<span style="font-family: Arial, Helvetica, sans-serif;"><b>Directions:</b></span></div>
<div>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Combine all ingredients in the Vitamix (other blenders would probably work).</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">Blend until smooth.</span></li>
</ul>
<div>
<span style="font-family: Arial, Helvetica, sans-serif;"><b>Notes:</b></span></div>
</div>
<div>
<ul>
<li><span style="font-family: Arial, Helvetica, sans-serif;">I don't know why I used pumpkin. I just really like pumpkin and get the urge to put it in everything. It would <i>probably</i> work if you omit it, but I'm not sure.</span></li>
<li><span style="font-family: Arial, Helvetica, sans-serif;">This in itself is a versatile recipe. It can be used as frosting, mousse, pudding, spread, toppings. A bit of liquid such as almond milk or even water can be used to thin it out in order to adapt it to your liking.</span></li>

<span style="font-family: Arial, Helvetica, sans-serif;"> Do you have a sweet tooth? I have a major sweet tooth! I eat healthified desserts all day long! My newest obsession is Quest Bars. Have you tried them? They are so delicious! My favorite flavor is Chocolate Peanut Butter. I also really like Banana Nut Muffin. I just wish those bars weren't so darn expensive :(</span></div>
